Feng Zhua: the fenix claws.
Chinese gastronomic culture has a really rich history and its roots are deeply but this didn’t stop cooks and chefs, during the centuries, to make it evolve, mixing it with brand new techniques and combinations that produced modern recipes that we daily consume.
Anyway, MU Dimsum strongly believe that tradition must not be forgotten: that’s the reason why on our menu there’s a strong presence of Cantonese traditional and popular dishes. An example of our commitment in preserving and exporting the gastronomical Cantonese tradition is the presence in our menu of “feng zhua”, braised in black beans sauce chicken feet.
Known as well with the epithet of “Fenix claws”, this dish is really common in South East Asia: so common that in China supermarkets use to sell it cooked in different ways and packed to be eaten as snacks. Consumers’ demand of this good has so increased in the last decades that China is a main worldwide importer of the raw material: this makes sense if you think that exists more than sixty different recipes to cook chicken feet!
Chicken feet follow a special treatment in order to preserve only the eatable parts from which derives a gourmet dish, especially for those foodies that love gel-like consistencies and unique tastes, exalted by a cooking method which makes this snack a must-to-try.
